Tasting Notes
This Pinot Noir is elegant and balanced with great natural acidity. Bright and vibrant, it shows dense plum and red berry fruit, expansive flavors of spices and earth, great structure, and minerality. This wine is concentrated, yet light in the mouth with a long finish. We produced six barrels of Pinot Noir from Bien Nacido and Solomon Hills Vineyards in 2011. These Pinot barrels were stored deep in the cellar room and quietly nurtured for eighteen months amidst the highly coveted Jaffurs Rhône varietal barrels.

Composition 100% Pinot Noir
Fermentation Solomon Hills fruit was 2/3 stemmed, 1/3 un-stemmed whole cluster fermented for 14 days after 48 hour cold soak. Bien Nacido fruit was stemmed, not crushed. Intact, whole berries fermented in small boxes for 14 days after 48 hour cold soak. Once the fermentations were complete, wine was co-mingled for barrel aging.
Barrel Aging 18 months in 17% new French oak, 83% 1 and 2 year old French barrels. No midterm racking.
